Fenghuang traditionally represents a female and a male as a symbol of marriage and unity as well as yin and yang. In this sense, Mei doesn't conform to the gender binary and feels unattached to either of which they stand for, instead feeling something like a mixture of both if either at all. Their human form is primarily masculine, so they may refer to themselves as he/him out of convenience and they don't mind others assuming as such. However whichever pronouns people choose to address them by they likely won't have any qualms with. (As a side note I'll probably use they/he interchangeably, and anyone else is welcomed to address them as whichever pronoun they choose, he/they/she/it etc.).
Fenghuang is technically their "real" name since they were never given an official one but they chose themselves another one along the line. Meilin sounded pretty, and also they do enjoy plums so "plum grove" seemed appropriate. They write their name with the characters 梅 (mei, plum) and 林 (lin, forest), and the Feng is from the masculine side of Fenghuang.
The Chinese phoenix is similar to the Japanese phoenix, Hou-ou, so if necessary it's possible that Fenghuang and Hou-ou are both part of his identity. However Fenghuang is almost completely different from the Greek phoenix, so the traditional aspects of it don't apply to him and have no close relation. (He doesn't turn to ash to be reborn, for example.)
Mei's human form resembles someone in their late teens or early twenties.

Personality here
The world Fenghuang is born into is one from long ago, longer than they can remember. But persisting throughout centuries and centuries, overwhelming darkness - the toxins of greed, envy, wrath, sin - infects its very core nonetheless. It repulses them, and so they hide. To purify, they feel, is not their task.
But every few centuries, a bright light pierces the stifling smog. It's warm and calming, and it's their favorite. And it is always fleeting. They emerge from hiding and grace the people with their appearance as they bask in the presence of a virtuous heart, but the whitest of intentions are often the most susceptible to blackness. Once they sense the inevitable corruption, it is time for them to flee once more and hide until a reason to appear shows itself once more.
Over time, the phoenix becomes a symbol of righteousness, and meaning is attached to its emergence. Only the most golden of eras are christened with the attendance of Fenghuang, and only worthy rulers with upright intentions gain its favor. Areas inhabited by Fenghuang are said to have achieved utmost peace and prosperity. Architecture is erected in its likeness, and Fenghuang enjoys the brief company of mortals. The bird lets itself be molded by these beliefs, lets its behavior be recorded by humans for study. Their Faith fuels it as much as their light does.
Centuries pass like seconds though, and Fenghuang can hardly tell when its appearances begin to become scarcer and scarcer. The world has always been dark, but it fails to sense that it is getting darker. Only the light of goodness draws it out, and when the familiar pull comes, telling it that once more an oasis of human grace has opened, Fenghuang flies to meet it.
Yet the greeting they receive is none like any before. Humans' reverence, their joy at Fenghuang's arrival, is nowhere to be seen. Looks of shock, surprise, disbelief are shot at it, and soon the cries begin.
"Is that a bird?"
"It's huge!"
"What kind of hawk is it... It must be a hawk right?"
It's the first time Fenghuang returns to its abode without basking in the virtue it loves so much.
The next time it awakens, it comes in a form that's never been seen. The power to mimic human appearance has always been something it's possessed, but never had a reason to use. It's almost a shame it needs it now. Walking amongst humans, instead of soaring above, is in one word... disgusting. The negativity and deception in the air is suffocating, and being in the thick of it is even worse than they'd thought. They want nothing more than to fly away, but even that isn't an option.
Because they are weakening. Their flames are a candle to the roaring blaze they used to be, and this form is the only one acceptable to mortal eye (no longer is a magnificent bird something to admire rather than something to gawk at). They spend years as the human, Meilin, and they adjust. But it's never easier. The era of a new emperor, the rise and fall of regal dynasties, Fenghuang no longer has a place to welcome them; for they no longer exist. Instead, he walks in the streets, seeking morality in the only way he can: blending with the mortals who wouldn't welcome a monstrous bird.
The years have turned him cynical, and much of this mortal world defies his strict sense of virtue. Surrounded by the natural human darkness, he's beginning to wonder if the purity he loves exists in this odd, modern time. With rumors of a new prophecy spreading, he's become increasingly interested in the affairs of the demigods and other monsters. He wonders if it'll be a new era worthy of his blessing. Or perhaps he's hoping it will be.
